Changing the name servers is only needed with our web hosting, due to the vhost configuration on our end.

With the VDS server, you effectively have a dedicated IP for the web server you run, so you could just use your domain provider's controls to point the domain to the VDS IP with an A record.

Not sure if it is what you are looking for, but you can enable (enabled by default) email notifications when an event is posted to your "Events log" page in the NFO control panel, which will post if an automated server restart or repair happens.

To be clear, if you change the password in the control panel, that doesn't take effect until the next OS installation. Where specifically do you see this message showing up?

The VDS server itself shouldn't be restricted in that way, but the OS you are running on it may. Which OS are you running?
