Minecraft 1.31
If I update to the new version, will I still be able to play the worlds previously created? Do we have to do anything on our end to the server?

We should have our auto-installers updated later today.
If you'd like you can manually upload the 1.3 jar via FTP. Your FTP credentials are available on your File Manager tab of the Control Panel.
As far as a new world, it SHOULD work with the current world but borders may be kind of wonky.

When you approach newly generated chunks you'll notice significant changes on the land since this update includes a change to how land is generated.
It'll have a sort of "sliced land" look to it where a mountain just stops and just behind it is a y=64 forest.
This may also effect weather.

I just explored some new territory on my server after updating to 1.3, and the land seems to be continuous. I think the map generation only changes if you create a new world with the new larger biomes.
