What changes, if any, do I make if I want to switch my Windows server toa Linux server with 128 tick??
Will all my SM and MM plugins work, and will all my config files still work???
I have never run a Linux box.

No.
You will need to get a new sourcemod and metamod version. Most sm plugins will swap easily, but extensions don't, check to see if the extension has a .so file(linux version of a .dll).
MetaMod plugins are the same way, make sure they have a .so file.
(common sm extensions like sdkhooks are linux compatible for sure)
Most people would advise against 128 tick, it is usually argued it does not make much of a difference, and not worth the price boost.
