I recently installed Lubuntu or more accurately lubuntu-desktop but it's having some really wierd video errors, some things seem to be in 8-bit color or something else as it's all pixelated and grey currently the cpu meter, desktop manager and desktop wallpaper do this

Since I'm not familiar with that software, I don't have an immediate solution, but have you tried different resolutions and color depths?
Are you accessing the server through its own VNC server instead of using the emergency console that we provide? You should generally do that, for performance and compatibility reasons.

I have fixed the issue, I added this into /usr/share/X11/xorg.conf.d/xorg.conf
