I'm seeing speeds much lower than I would like.
While connected to the VPN I'm seeing roughly 70-80Mb/s.
While disconnected and speed testing the same server I see 200+Mb/s. (I pay for 180Mb/s)
Generally, on my other OpenVPN servers, I can reach downloads up to 150Mb/s if not higher. But for some reason, my current server is extremely slow.

If someone could help me I'd appreciate it. I feel like there's probably something wrong for me to be seeing speeds this low.

Also - ping seems to jump around, but ONLY on the VPN. Pinging google ranges 70-130ms on VPN, off VPN a solid 20-30ms.
Ping to a Teamspeak server (hosted on the same VPS as the VPN) is 100ms +/- 20ms. Without VPN, 19ms +/- 1ms

If your ping jumps around, I'd recommend running an MTR in both directions, as that will show us where the slowdown might be happening. It could be that your ISP has an overloaded peering point or that the routing is scenic, and we may be able to help route around that.

Are you sure the VPN was turned on? You should have a much different path with it enabled. Is your external IP address different when you have it enabled?
These MTRs show possible low-grade packet loss, which would cause you problems. Have you tried rebooting your modem and router already?
