There are a few ways to do this. One is:

1. Either log in through Remote Desktop or click the VNC Console option in your control panel. Log in to Windows as Administrator.
2. Hit Control-Alt-End, if you're using Remote Desktop, or the button to send Control-Alt-Delete, if you're using VNC.
3. On the menu that appears, choose "Change a password.." or similar.

Another (more forceful) method that you can use if you don't have manually-encrypted files or folders on the drive is:

1. Either log in through Remote Desktop or click the VNC Console option in your control panel. Log in to Windows as Administrator.
2. Open Start->Settings->Control panel->Administrative tools->Computer management.
3. Click "Local Users and Groups", on the left.
4. Double-click "Users", on the right.
5. Right click "Administrator" on the right, then choose "Set password..."
