It would decrease our server cost by $8. Can I update our server info to take advantage of the savings?

If so, what steps should I take?

Yes, you can change your pricing. Go to price/order and do a change order for the exact same server you have now and you will start a new subscription that reflects the current pricing. Then cancel your old one at the old pricing.
