We have no current plans to add more options for dedicated servers. It isn't practical for us to build different machines to order because custom machines can't immediately be reused following customer cancellations, and most locations are remote for us, so we can't adjust servers in-place. Additionally, there's no good middle ground between the E3-1270 machine and the dual X5675 machine right now, because Intel does not have Sandy Bridge 2P offerings yet and there is a large, unjustified price jump between 1P and 2P, even for slow 2P CPUs.
I have not heard any discussions of BF3 performance on Opteron machines. I don't anticipate that hosts will use these because of the slower performance per core; BF3 is a mostly single-threaded game, so core speed is critical.

And as for the BF3 and the Opterons, I was really hoping they'd come through with a highly multi-threaded server platform

We'll test and roll out E5s if they're adequate, yes. My main concern with them is that their clock speeds are low.
