How do we apply Updates??

Assuming it's managed or an individual server order, updates are applied automatically. If it's a sourcemod or plugin update you have to trigger the sourcemod, metamod, or hlxce updates by clicking the autoinstaller update/upgrade button. If it's an individual sub-plugin of sourcemod you have to do that manually.

So the game/Valve updates are done for us when they are available?

Unless it's an unmanaged dedicated server or VDS it's done automatically.

Do we get some sort of notification that the updates were applied, so we can see if it broke our plugins?

Hi Cain,

Yes you will receive an email saying that your server will be shutdown because of an update.
It usually take maximum of 5 minutes to apply update.
Also, in your Control Panel, there's Events Log option which will tell you exactly what these updates are about
