Currently have an 8 core VDS with 10 gigs RAM and 15 gigs SSD space.
Performance wise, how would that do versus the E3-1270v3 setup. Since it only has 4 cores, but 3x the RAM. Would there be a performance boost compared to my current setup?
I run several U3 engine based servers. Homefront, Chivalry, Primal Carnage, Killing Floor. Along with that are some CoD servers, TS3 and several B3 bots.
I know the VDS overhead effects the performance to a degree. I'm seriously considering going to a full box, but want to be sure the servers will run as well as they do now, if not better, since there are fewer cores involved.
Also, is it possible to get a 10k RPM drive in lieu of the 7200?

The 1270v3 has 8 HT cores, which is what you buy when you buy a vds. You are not losing ANY cores going to the dedi.
IN MY EXPERIENCE dedicated servers run circles around vds's in terms of performance. I saw about a 40+% performance boost going from 6 cores on a e5-2690 to a 1270v1.
In addition, you don't need to share the slowest resource on a vds, the storage.
You will definitely see a performance boost going to a dedi from the 8-core vds for CPU performance. I can't say whether or not the memory will make a difference, unless you are starting to run out of RAM now, then you will see a difference.
NFO generally doesn't allow custom configurations, so in-case you cancel the box they can keep it racked and re-sell it without having to ship the server back and forth.

The performance between a higher end VDS and a full machine is likely very similar. The main difference is that you're losing the overhead from being in a virtual environment.
If you run more intense games such as BF3, NS2 and Arma 2 than the difference between the two will become a lot more apparent simply because they need as much power as they can get, so even the very minimal performance gain from not being in a virtual environment can seem like a lot.
We normally recommend users stick with a VDS due to the freedom they have. Things like being able to reinstall your OS, move locations and upgrade/downgrade at any time are not things that can be done with a machine.
