VDS vs Dedicated
So I was wondering which way of hosting was faster.
In the description for VDS servers it says ''All at a price point much lower than a dedicated server with equivalent performance.''
Also for Dedicated servers it says ''The guaranteed highest performance''
The order I am choosing for VDS and Dedicated are the links below

What I'll be doing with these servers are running a Garry's Mod server with 70 - 75 slots, with 170 addons ( I know it's too much )

With what you described, I don't see anything else besides a dedicated server even being capable of doing what you need(Assuming the server is active).
Garry's mod itself is known for being a bit piggy at higher player counts, let alone once the addons are added. The biggest issue here is that Garry's mod won't utilize more than one core. While some will spill over to the second, it's not much by any means. The next biggest issue is since Garry's mod won't use more than one core, you'll need one of our fastest machines to achieve the highest per core performance, which is an E3-1270V3. This ultimately raises your bottom line and leaves your machine fairly unused(unless you plan on running more than 1).
I'd recommend you split the server up into two or three 30 slot servers. This will allow you to achieve solid performance on each server and use the machines resources so you aren't wasting money.

Do you mean a dedicated machine, or a shared game server? Your picture for "Dedicated" is the order page for a shared game server. I would go with a shared game server and lower the tickrate to 33 or less(anything lower than 33 will need to be ticketed). The overhead on a VDS is still too high to run a large srcds game server.
While shared game server hosting will get you the highest performance possible on todays hardware, a 70-75 slot gmod server will still lag without proper optimizations.

Well I really want to host a 70 - 75 slot server with the addons too, so which plan will handle that? I will be fine running multiple servers. Im thinking that the e3-1270 will run it fine, Or do I need a higher plan?
if i can run 3 servers or 2 ill run a DarkRp server with 170 addons and sandbox with 50 addons, if i can run 1 more ill run TTT ( don't know how many addons )

Anything higher than a 1270 dedicated machine won't be worth the price. If you want to move forward with a 75 slot server with the addons, I'd recommend you look at our V3 configuration. https://www.nfoservers.com/order-dedicated-server.php. It's really hard to say as usage is going to vary a lot based on server configuration and the types of addons..etc.
Each revision is about 5-15% faster than the last. so it can be noticeable, yes. In a case where a server needs every last ounce of power. It'll be more noticeable.Anything higher than a 1270 dedicated machine won't be worth the price. The difference between the 1270v1 and the v3 is barely noticeable.

To Soja: The shared game server pic was mean't for full machines ( I thought shared game servers were dedicated )

In real world cases it will be only a few server fps improvement. We moved our CS:S ZE server from a v1 to a v3, which absolutely needs every last ounce of power and we noticed negligible performance improvements. 10-20 slots is actually quite a bit and yes, the real world performance will vary. Neither options are really good ones because no matter what he chooses I don't believe it's possible to get a 75 slot Garry's mod server with 170 addons running smoothly.In real world cases it will be only a few server fps improvement. Yeah I agree, most LUA plugins aren't made well, on top of running that many, no matter the tickrate it probably won't perform to my personal expectations.
