I have looked around and I can't seem to find any documentation regarding the use of the firewall provided by NFO in the control panel.
What would be the best method to block all traffic except traffic coming from 1- US & Canada, 2- Whitelisted IPs.

There is a fair amount of information provided on the firewall tab itself, at the bottom. As for blocking entire countries. We don't offer a way of doing this and ultimately I wouldn't advise doing so. Sticking to blocks which are needed is best and would prevent any performance issues on your server or the host machine.
