I'm no professional, but I have adjusted the setting to my pointshop for my TTT server with your settings in mind. I'm not sure if you're running a TTT server or not, and if this will even apply, but here's what I did.

1. How do you remove a category from your pointshop?
-I've had issues with the default weapons that come with _Undefined's pointshop, so I had to remove them. All I did was first save a copy of all the files I plan on removing, but then I go into my garrysmod/addons/pointshop/lua/items and here you'll see the different categories. I simply removed the weapons directory so that the pointshop would no longer have a lua file to display the category and its contents.

2. Making VIP jobs work right with lua errors?
-At this point I have no idea what you're referring to because I've never dealt with "jobs" let alone VIP jobs.

Again, this has worked for my TTT server, and I don't know what server you're running.
