Hello,
Sorry if you get these questions a lot. I have been a VPS customer with NFO for almost 2 years now and so far so good! I now want to buy another server dedicated to hosting websites, I will start off with hosting about 5 websites then maybe up to about 10, all will get a reasonable amount of daily traffic. What VPS is the best for me to rent? I was think the dual core vps with windows 2012 r2 would be enough.
Thanks,
Alex

Depends entirely on the type of websites you intend to host. If you are running entirely dynamic sites(all php/other, heavy database calls) you will need a lot more power vs delivering flat HTML files.
I would recommend more than 2GB ram for web hosting, and a Linux OS. I would do a minimum of 4GB for php based websites. My single gaming community site is using 4GB ram right now due to mysql/php/apache. A 4-core VDS would do ok to start out with.
