You can see your last installed OS from the "Server control" page of your VDS.

John, I don't see it there since I am on a managed machine I didn't have the choice by default to choose specifically which windows os version I went with.
I am hoping Windows 2008+ because otherwise I won't be able to run BF3 if you guys are going to offer it.

You will see it there. It will say either "Managed Windows 2003 game server" or "Managed Windows game server". The latter means Win2k8 R2.
We only started using Win2k8 R2 by default a few days ago, so the odds are good that you will see Windows 2003 listed, unless you have just reinstalled.

The reason I am saying this is because I use IP 66.151.138.51:27015 so I'd hate to lose that one particular IP.
I hear anything under 2008 won't work with Battlefield 3.
