Looking at getting a vds to run dayz on, probably gonna have 3 servers with a maximum of 40 slots
tryuing to keep costs to a minimum so any advice welcome

In my original testing I was able to get a single DayZ with around 50 slots on a three core VDS comfortable. You may be able to push that limit a bit, but DayZ fairly intense so I don't expect you to be able to get three.
You should start with three core and create a single server to see how it performs. If it is doing well add another and see if performance dips, I imagine it's going to but never hurts to try.
Arma2 has about two main threads which it will use, so a good bet to go by is two HT cores per server.
